Fruit & Nut Loaf

As Christmas is nearing, it's time to bring out those recipes that scream festive season. This cake is truly that for me. It's loaded with spices, fruit and nuts - a show stopper.

Here's what you'll need:

3 cups spelt flour

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 all spice

3/4 cup raw cashews

1/2 cup hazelnuts

2 cups black raisins

1 teaspoon baking powder

1/2 cup melted coconut oil

1 & 1/2 cup milk ( any milk works)

1 orange ( zest & juice )

1 chopped apple

  • Preheat your oven at 170 degrees

  • Start off my sifting your flour.

  • Add in the dry ingredients and mix well.

  • Follow by adding the orange zest & juice, apple and milk. Mix again.

  • Add the coconut oil last as it hardens when it touches the cold milk.

  • Place the mixture in a baking tray. I used a loaf shaped tray, but this is completely up to you.

  • Bake at 170degrees for 35 mins or until you poke it with a knife and it comes out clean.
