Breakfast Parfait

Super easy recipes are all that we are about especially with ingredients you can easily find! I have to admit that this parfait turned out just so pretty and best of all it's completely vegan. The perfect summer breakfast which will set the tone for the rest of your day. The best part is that you can set up these cups in advance and store them in the fridge for up to 3 days.

Granola Layer

I make my own granola for the sake of knowing all the ingredients used. I call it my genuine Granola recipe as its made with real and whole ingredients. I make big batches of this and store it in jars. It lasts over a month and add it to most of my breakfasts.


3 cups oats

1 cup red raisins

1 cup cashews

1/2 cup coconut oil

1 cup peanut butter

Mix all ingredients together and bake for 10 mins.

Chia Seed Pudding Layer

3 tablespoons chia seeds

3/4 cup oat milk (any milk works)

2 tablespoons frozen berries ( thaw them and mash them in the chia mixture)

Mix the ingredients together and set aside for 5 minutes until the chia seeds expand and absorb the milk.

Now that you have the granola layer and chia pudding layers sorted, you can start assembling your cups. I finished it off with yogurt and some fresh fruit.
